The Tablas Creek Vineyard Extra Virgin Olive Oil is a blend of mostly Manzanilla and a few Mission olives, grown on our biodynamic and Regenerative Organic Certified® estate vineyard. We have roughly 100 trees that line our roads. We harvest these trees by hand in late November each year, our last harvest of the vintage. Depending on the year, we get between 25 and 100 gallons of oil.

Our tasting notes for the 2023 vintage:

The nose is expressive and vibrant with notes of sugar snap peas, lime leaf, fresh tomato leaf, sage brush, and green mango. On the palate, the entry is sweet and fruity, redolent of green apple skin, beet greens, and arugula. The mid palate is rich, full, and expansive, showing a Pecorino creaminess that evolves and builds to a peppery finish of deseeded jalapeño, fresh radish, and an asparagus head bitterness. The spice is assertive yet balanced, building gradually at the back of the throat without overshadowing the fruit.
