In exceptional vintages, Tablas Creek Vineyard produces small quantities of Panoplie: a Mourvèdre-based cuvée from meticulously selected grapes, made in the model of Château de Beaucastel’s Hommage á Jacques Perrin. In 2008, only 500 cases were produced.

The Tablas Creek Vineyard Panoplie 2008 is a barrel-by-barrel selection of the most intense lots of Mourvèdre, Grenache, and Syrah in the cellar, structured for long aging. It is a vibrant purple-red in color with a rich nose of plum, coffee and mineral. The complex palate shows powerful flavors of black fruit, licorice, pepper, and roasted meat, with an appealing inkiness from the unusually high Syrah content. It is intense yet lifted by vibrant acidity and persistent minerality, with a wonderfully long, spicy finish.

Recipes & Pairings
2008 was our second consecutive drought vintage, with low yields, cool-climate characteristics, and a persistent elegance across both whites and reds. A late spring and moderate summer combined with beautiful harvest weather to produce gradual ripening and red wines that were unusually fresh and approachable despite appealing lushness. Syrah began the harvest of our reds between September 9th and October 7th, followed by Grenache between September 23th and October 24th and Mourvèdre between September 30th and October 30th.
The grapes for our Panoplie were grown on our 120-acre certified organic estate vineyard.
The grapes were fermented using native yeasts in open and closed stainless steel fermenters. After pressing, the wines were moved into barrel, blended, and aged in one 1200-gallon French oak foudre before being bottled in July 2010.
